famous work is Flavor terminology and reference standards for sensory analysis of Sake .

He also edited a book «A Comprehensive Guide to Japanese Sake» published by Japan Sake and

Shochu Makers Association.

He will present an outline of the Japanese alcohol industries, the context for sake, its characteristics, i ts

production, the science of flavors and the different ways of enjoying sake.
