HYOGO MASTER CLASS “Discover Koji and fermentation culture”

This Master Class will include a tasting of Tanaka shuzoba sake and several quality soy sauces. Mr. Tomohisa TANAKA, completed his studies in zymology at Hiroshima University in bachelor’s degree and in graduate degree. After having been experienced in the field of production, quality control, and research and development at Kamotsuru Brewery for 10 years, he is fully active as Director of Tanaka Brewery. At the same time, he spends time to help developing the region with his father who is the general administrator of the Brewers Association of Himeji.
