Session 2 :

How to make chicken shine… Teriyaki style!

From the egg, we move on to the chicken !

The Japanese have a thousand and one ways of preparing and serving chicken, sometimes even raw… Teriyaki sauce (Yaki, from the Japanese verb yaku: cook over a fire, grill and Teri, de teru: shine, illuminate), made from soy sauce and mirin, is an important part of Japanese cuisine.
Paired with 4 different sakes to go with the dish, these two pillars of Japanese gastronomic culture should definitely sublimate the natural taste of this already so appetizing meat delicacy?

This year format for the workshop is shorter and more playfull in order to explore and get a feeling of how rich and deep can be the opportunities to pair food with sake. It’ll give you a chance to try different types of sake on the same dish and decide on your favorites depending on your own taste for sake and food as well as for pairing. It is after all also a very personal and subjective sensation.
