The idea of this workshop is to give to five famous chefs, five incredible and hard to find sakes, and to ask them to imagine, create, a dish following their source of inspiration.

These five creations will be an original work done specially for this fair.

Jacques GENIN (Pastry Chef / « LA CHOCOLATERIE DE JACQUES GENIN » – Paris 3 & 7 – Over the years, Jacques Genin’s « chocolate factory » quickly became the Parisian’s den of all the amateurs of « Paris-Brest », lemon tart, caramels, chocolate and others jelly fruits. Whatever touches Jacques Genin will instantly become a carriage; this man is a real « sugar » magician. And his  « Mille-feuille » ! Maybe the only pastry chef in Paris to propose it « minute made » for the lucky ones seated in his tearoom of the 3rd district, rue de Turenne in Paris. Will be participating to the « One Chef … one Sake » pairing workshop.   http://www.jacquesgenin.fr ), Koji HIGAKI (Chef / Restaurant  « L’INCONNU » – Paris 7 –  Koji Higaki comes from the prefecture of Kôchi, south of Shikoku’s island in Japan. Before opening a few months ago his first restaurant in Paris « l’Inconnu » (« The Unknown »), he had been working the five past years as a sous-chef at the very famous « Passage 53 » (the only two stars Michelin restaurant owned by a Japanese chef preparing French food). His cooking experience? Japanese, Italian and French. Koji’s experience is rich of all three cultures. But it’s the Italian one which seduced him most. For its incredible fresh products and its simple cooking techniques. Koji’s dishes are precise, modern, refined and simply delicious. He owns one of the best bistrot of Paris. He worked for many years with Yves Camdeborde, who opened in the 80’s the first Parisian gastro-pub. For more than 15 years now, Stéphane is every night behind the stoves of his Parisian bistro « l’Ami Jean » (« Friend George ») in the 7th district. Proud of the culinary transmission that he has the chance to receive, his « Basque » cuisine is generous, tasty, only prepared with exceptional ingredients! He had the heavy responsibility to set up from scratch the very luxurious wine cellar of the hotel. Within one month, he gathered no less than 14,000 bottles. From very rare bottles, like the oldest wine of the world, to some beautiful lucky finds… and sakes!
