Food & saké pairing workshop 2021 – Theme:
Chicken-and-egg… between France and Japan

Session 1 :

Sake and egg, the perfect match?

Any sommelier will tell you, finding the right wine to pair with egg dishes can be a real headache. On the contrary, Japanese sake is a natural companion to the elements that compose the egg and its numerous variations recipes.

As the “perfect-boiled egg”, inspired by the molecular gastronomy hits many gourmet tables, we’ll experiment together in order to find the perfect match! Of course, a great deal of subjectivity can intervene in the different ways of approaching the pairing, so this will be an opportunity for everyone to choose out of 4 sakes the one(s) that’s constitue their ideal for a perfect egg-saké pairing!

This year format for the workshop is shorter and more playfull in order to explore and get a feeling of how rich and deep can be the opportunities to pair food with sake. It’ll give you a chance to try different types of sake on the same dish and decide on your favorites depending on your own taste for sake and food as well as for pairing. It is after all also a very personal and subjective sensation.

To comment or guide you through this experiment, 3 lecturers will share the experience with you :

Matheo Blampin « culinary and innovation manager » at Kura restaurant
Marc Antoine Tamba « responsable opérationnel » at Kura restaurant
Sylvain Huet, 1st French to have received the Saké Samuraï distinction and organizer of the salon du saké

In partnership with the gastrnomic restaurant KURA – Paris 16th Arr.
