In recent years, several productions of artisanal sake have been launched in various

European countries such as Norway, Spain, even France last year and more recently the

United Kingdom. These experimenting producers or already experienced for some now

brew local «Japanese sake». One year after our first panel discussion on the subject, we

will review their progress and discover newcomers. Do their motivations and sakes look

alike, do they draw their inspiration from Japan as a model or do they seek to shift away

from it? Between influences and dissent, where will they stand?
