Japanese knife sharpening by Miwo Tsukushi Hime

Polishing time, reflecting the soul—the age-old tradition of Izumo stones (Iyo-to).
The history of Iyo whetstones is ancient: as early as 760, they were used to sculpt a statue of Kannon Bodhisattva.
This is the first official mention of a whetstone in a document, making it the oldest known stone in Japan. Iyo-to is renowned as a stone suitable for polishing swords, and from the late Heian period to the Kamakura period, it was used to sharpen katanas. In the countryside, peasants used Iyo and Seto stones to maintain their everyday tools—sickles, knives, axes—helping to improve their sharpness. It can be said that Iyo-to has sustained blades throughout Japan, from the domestic sphere to warrior society. With the arrival of the Heisei era, the culture of sharpening blades with natural stone gradually faded. In order to preserve this precious Japanese cultural heritage, the production of Iyo stones resumed about fifty years after the quarries closed. However, extraction is now carried out at a new site, located a few kilometers from the old one, and their name has been changed: from “Iyo-toishi (Iyo-to)” to “Iyo-meito.” This is what Iyo-meito embodies: 1,300 years of history and the eternal breath of the earth. Legend has it that this stone was created by Princess Miwo-tsukushi-hime. Placed alongside a Japanese knife, it becomes a decorative object imbued with wabi-sabi. But even more, we invite you to actually use it in your kitchen, to sharpen your knives, and thus experience a refined art of living made possible by the natural Japanese whetstone.
