Sake Pairing with Wagashi: Traditional Artisanal Japanese Sweets, Inspired by the Seasons

Wagashi, or “Japanese style confectionary”, are one of the unique food cultures of Japan. Made primarily from plant-based ingredients including azuki beans and rice, they are individually handcrafted by skilled artisans into edible works of art. Designs are inspired by the twenty-four Japanese micro-seasons, poetry and traditional celebrations.

Wagashi were originally created to serve during the tea ceremony, but nowadays are enjoyed in many different settings as a delicious part of every day life. Modern wagashi makers are busy experimenting with new flavours and inspirations, and we can now enjoy wagashi overseas – including in Paris!

Recently, wagashi and sake pairing has become popular in Tokyo and Kyoto. In this workshop sake educator Sarah Stewart @sakestudies will introduce you to wagashi, the traditional artisanal sweets of Japan and you will experience first-hand how the different flavours and textures of these charmingly seasonal sweet treats can pair beautifully with many different types of sake.

Sarah Stewart

Sarah Stewart @sakestudies is a WSET Certified Sake Educator and Head of Sake Teaching at West London Wine School. She is one of only three instructors worldwide able to teach the advanced Sake Scholar qualification on sake regionality, judges sake at the International Wine Challenge, and serves as the British Sake Association’s Membership & Events Officer. She also teaches Urasenke chado (the Way of Tea, colloquially known as ‘tea ceremony’) in London and has studied chado for 20 years (including two years in Japan), giving her firsthand understanding of traditional Japanese culture and seasonality and hands-on experience making and serving traditional wagashi.
