Sake is inextricably linked to many aspects of traditional Japanese culture. Chanoyu, “The Way of Tea” (often referred to as tea ceremony), is a 500+ year old art form focused on the simple but heartfelt act of preparing tea for guests. The pinnacle of chanoyu is hosting formal tea gatherings, called ‘chaji’, which include the preparation and service of two styles of tea and a traditional multi-course seasonal kaiseki meal accompanied by sake.

In this conference we will introduce the Way of Tea and the flow of a traditional tea gathering, and demonstrate the traditional manner of sake drinking in the tearoom and a simple tea service. A few participants in the conference will have the chance to be served a taste of sake and a bowl of tea.

This session will be presented in English.

Sarah STEWART – Saké educator and Ura-Senke school of tea teacher and practitioner

Sarah Stewart @sakestudies is a WSET Certified Sake Educator and Head of Sake Teaching at West London Wine School. She is one of only three instructors worldwide able to teach the advanced Sake Scholar qualification on sake regionality, judges sake at the International Wine Challenge, and serves as the British Sake Association’s Membership & Events Officer. She has studied the Urasenke tradition of tea for 20 years, and spent a year in Kyoto studying at the Urasenke Professional College of Tea’s Midorikai program.
