The talk traces koji’s development through major historical periods, highlighting the role of religious institutions, government regulation, and scientific advancement in shaping koji culture. From ancient imperial brewing ministries to today’s seed koji producers, discover how this microorganism has been cultivated, controlled, and commercialized throughout Japanese history, culminating in its recent UNESCO recognition.
