This presentation explores the fascinating history of koji in Japan, from its prehistoric origins to modern applications. We’ll examine how this essential fermentation mold arrived in Japan, evolved alongside rice cultivation, and became central to sake production. The talk traces koji’s development through major historical periods, highlighting the role of religious institutions, government regulation, and scientific advancement in shaping koji culture. From ancient imperial brewing ministries to today’s seed koji producers, discover how this microorganism has been cultivated, controlled, and commercialized throughout Japanese history, culminating in its recent UNESCO recognition.

Speaker:

Arline Lyons is a translator, interpreter and consultant specializing in sake and Japanese fermentation. A Fellow of the Institute of Translation & Interpreting (the main UK professional association for working translators and interpreters) who also hold a number of sake qualifications such as Sake Scholar and WSET Level 3 Sake, she helps Japanese sake brewers, exporters, brewing organizations, and seed koji producers communicate effectively at international level. With deep expertise in both the technical and cultural aspects of sake production, Arline bridges the gap between traditional Japanese brewing knowledge and modern global interest in Japanese fermentation.
