Exploring the traditional knowledge and skills of the sake shubo (starter culture)

To make great sake, you must first start with strong yeasts to power the fermentation. This talk will explore how those yeasts were traditionally cultivated in the shubo, or ‘yeast starter culture’, the first step in sake brewing. We will delve into the history, science and culture of shubo production, from medieval methods developed in the Buddhist temples of Nara in the 14th century to the kimoto method that propelled Nada to become the dominant sake producing region during the Edo period, and finally to advances in the early 20th century that brought sake production into the modern age. Regional shubo variations across Japan as well as the recent renaissance of ancient shubo production methods coming back into popular use will also be discussed.

Dr Sarah Stewart est formatrice et consultante en saké certifiée WSET et responsable du département saké à la West London Wine School, l’un des plus importants établissements de formation aux boissons du Royaume-Uni. Elle dispense des cours de saké pour les qualifications WSET, parallèlement à son propre programme original de cours sur la dégustation et les accords mets-vins. Elle est l’une des quatre seules formatrices au monde à dispenser le Sake Scholar Course (une certification avancée en régionalité du saké, proposée chaque année à Londres). Sarah est juge de saké pour l’International Wine Challenge et est également responsable des relations avec les membres de la British Sake Association. Elle a vécu deux ans au Japon et y retourne chaque année pour une formation continue sur le saké.
