In the small town of Tsunan (Niigata Prefecture), Mr Takashi IWAMA is one of the very few Japanese farmers, who are still growing the rice called Gohyakumangoku in rice fields plowed with horses only. This specific sake rice is being grown by Mr Takashi IWAMA without use of pesticides or chemical fertilizers; it is grown with horse manure (droppings) only.

The sake produced by Mr IWAMA thereby is a purely organic sake which is a real Terroir sake, albeit in a very limited quantity under the name of Tazinba, a noun made with the three words of rice field or ta, man or zin and horse or ba.

This conference will be delivered in French but the lecturer can also speak in Japanese and in English if need be.

Info on producers:

The Tazinba sake is produced by two different kuras that are set up in two different regions in Japan. Tazinba Kuro is produced by Shotoku Shuzo, a very old establishment of Fushimi founded in 1645, while Tazinba Shiro is produced by Tsunan Shuzo, a very new kura founded in 1996 in the town of Tsunan where the rice is grown.

Miss Saké Japan 2022, Risa ISOBE,who has developed a strong interest in this subject matter, will make a presentation in the context of this seminar, focusing on the work performed by horses in Japan in agriculture, forestry and recourse to horses in many ways in rice fields.
