At Salon du Sake 2025, Fukushima Sake is honored as the official guest of honour – a true crown on the work of countless brewers and passionate ambassadors who promote Fukushima sake every day. But how did this region earn such a prestigious position?
For decades, Fukushima has been recognized as one of Japan’s top sake-producing prefectures. Year after year, its breweries win more awards than any other region at the most important competitions worldwide. This year’s edition of Salon du Sake celebrates the global recognition that Fukushima sake truly deserves.
In this free seminar, Joris Vermeer – Dutch sake importer and promoter of renowned Fukushima breweries such as Akebono Shuzo, Kokken Shuzo, Haccoba, Daitengu Shuzo, Aizumusume, and Tatsuizumi – will share the secrets behind the region’s success. Together, we will explore the history of Fukushima as a leading sake region, taste a selection of outstanding sakes (included), and hear Joris’ firsthand experiences as an importer working closely with these breweries.

Joris Vermeer
Joris Vermeer (1980) is a former restaurateur and presenter of the culinary travel series De Aardappeleters, made for Dutch national television. In 2024 he co-authored Hokkai, the Taste of Japan in IJmuiden, finalist for Dutch Cookbook of the Year. Working in the restaurant of the company, Hokkai Kitchen, he discovered his fascination for sake. As head of procurement of Hokkai Sake, he brings expressive, artisanal Japanese sake to Europe from breweries that are using traditional methods like kimoto and yamahai. He is always trying to build bridges between Japanese tradition and European gastronomy.
