The 2025 “Salon du Saké” European Fair for Saké and Japanese Beverages honours Fukushima Prefecture. Guardian of ancestral know-how, the region now stands out for its producers’ ability to honor tradition while embracing innovation. The kuramoto (owner-producers) of Fukushima and their toji (sake masters responsible for production), heirs to artisanal methods passed down from generation to generation, like Akebono Shuzo who “listens to the voice of the rice and yeast,” combine tradition with audacity. The Ninki Inc. brewery is the perfect example, with its sakes that are entirely handmade yet have a resolutely modern taste. By using traditional Japanese kettles for cooking the rice and preparing the koji, as well as wooden vats, which are very rare today, for fermentation, they offer relaxed Daiginjo, sparkling sakes, and sakes to be drunk hot and others cold, which are even sublime to enjoy in a wine glass.
