Application of high hydrostatic pressure (HHP) technology as non-thermal sterilization to  draft sake production could extend the shelf life while retaining the original sensory properties. The High Pressure Sterilized Draft Sake Consortium, represented by Niigata University of Pharmacy and Applied Life Sciences, newly developed a  Junmai Ginjo draft sake AWANAMA. The resulting AWANAMA is a sparkling type draft croudy sake, which is  made through HHP sterilization procfess.
