This MASTER CLASS is sponsored by the National Tax Agency (N.T.A.) of Japan that is officially in charge of Sake matters.

As of February 2020, there were only 3 areas (Hakusan, Yamagata, Nada) other than “Japanese Saké” (Japan), designated as Geographical Indication (GI) in sake.
Since then, there has been 7 areas designated (Harima, Mie, Tone-Numata, Hagi, Yamanashi, Saga, Nagano), and it is likely that more is coming.
Not only there are more areas, but there is more variety in the production standards, from the very loose (or the “doves”) to the very strict (or the “hawkes”).

What is happening, and what does this mean to the future of sake? Will this have any impact on defining “the best sake”?

A consultant who assisted drafting the production standards of 2 GIs (Tone-Numata, Hagi) will give some insight.
