Hyogo prefecture happens to be the birthplace of the famous Yamada
Nishiki sake-rice. It is often said about it that it is the king of sake-rice.
Premium sake made using Yamada Nishiki win more medals altogether
than any other. Emblematic producer of Hyogo prefecture, Takenosuke
Yasufuku will explain how and why the rich “terroir” of Hyogo brings out
the best in Yamada Nishiki for which the prefecture is the largest producer in all Japan.
