Koshu (long-matured sake) tasting
Maturing sake is often presented as an old tradition but, even if that may be the case, regrettably most brewers do not have much knowledge of and experience with this tradition. Nonetheless, long maturation of sake can provide brilliant results. Dick Stegewerns of Yoigokochi Sake Importers will present some of these, ranging from 7-year matured sake up until an incredibly 37-year long matured kijoshu. Some emanate from specialised breweries, others are from more recent centers of experimentation. And whereas some are the crystallization of many decades of experience, others depend on nothing but sheer co-incidence.
